VEGAN CHOCOLATE BANANA BREAD BITES

With mini choc-chips

Every day I try and eat a healthy and balanced diet – you know, a doughnut in one hand, a salad in the other...But it can be tricky sometimes to try and eat well when I have such a HUGE sweet tooth and nothing but goodies to pig out on instead of healthy snacks! This has always been my downfall. Because let’s be honest, it’s so much easier to grab the (delicious) processed food then it is to make a healthy snack when your running out the door (or around after kids)!

So I have tried to get myself into a habit on a Monday or Tuesday to whip up some insanely simple, fast and easy treats to try and combat the high sugar snacking throughout my week! And I can’t even tell you how much better I fell just knowing I have healthy go to treats waiting for me.

Difficulty: Easy!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

My sister has this saying that she whips out when she discovers she has prepped something previously for herself that she has forgotten about until she needs it – like food prep she’s forgotten until she’s hungry, washing she thought she hadn’t put on only to discover a more productive version of herself has already done her washing, and dried it for her; and the list goes on. I often hear the words “Thanks past Courtney” escape her mouth as she goes about her day (haha!) and as much as it makes me laugh, I now understand the beauty of how much I thank my ‘past’ self for making these healthy treats to keep my unhealthy cravings at bay! 

These ones are especially easy! Easy recipe, easy method and easy clean up! Win, win…Win?! They are deliciously healthy, filling and slightly addictive…which is okay because they are healthy, right? So, if you’re anything like me and crave sugary snacks during the day then you need to set aside 10-15 minutes a week to set your ‘future self’ up for some tasty success!

Gather The Following...

Now, Lets Begin!

Place all of your ingredients except your chocolate chips into a food processor and blitz on high until everything is blended together and holds its shape when pressed.

 

Once everything is combined, add in the chocolate chips and stir through using a spatula.

 

Place mixture into a bowl, cover with glad wrap and pop it into the fridge for 30 mins to chill.

 

Once chilled, remove the mixture from the fridge and roll a tablespoon of mixture in desiccated coconut to make balls. Done!

 

I like to keep mine in the freezer as a delicious treat but they will keep well in an airtight container, in the fridge for a week!

2 ½ cups Rolled Oats

1 medium Banana

1/3 cup Rice Malt Syrup

1 TBLS Cashew Butter

½ tsp Cinnamon 

1 tsp Vanilla Extract

1 TPLS Cocoa

1/3 cup Vegan Chocolate Chips

Desiccated Coconut
