VANILLA BEAN SPRINKLED BUTTERCREAM
Sweet, Simple & Sprinkled with fun!
There are two types of people in the world: those who eat to live, and those who live to eat and I have to confess, I am definitely type number two.
I 100% live to eat. I absolutely love food!
I live to enjoy the sweetest and best things in life and I’ll be the first to say buttercream definitely falls into this category… its sweet, soft, fluffy and generally encases another one of my loves, CAKE!
So, whilst I was devouring the icing -pictured here- I realised that I needed to share this wondrous love with all of my beautiful readers (that’s right – you!) as we all need a super simple ‘go to’ recipe for vanilla buttercream.
Whether you're tinting it any colour of the rainbow, topping delicious cupcakes, frosting large party cakes or just eating as you please, this is a super versatile recipe to have up your sleeve!
I may have ‘pimped’ this one up a little with a healthy dosage of sprinkles, but at its very core, this is a no fail Vanilla Bean Buttercream sure to impress those frosting connoisseurs!
This recipe makes a lot of buttercream (yay!) but of course the recipe can be halved if only a small amount is needed…but let’s face it, leftover frosting is never a bad thing!

Gather The Following...
Now, Lets Begin!
Start by beating the butter on high using an electric stand mixer until light and fluffy (roughly 5-7 minutes). Once butter has softened, add in the Vanilla Bean Paste then beat until fully incorporated.
Lastly, with the mixer on low speed, add in the powdered sugar, one cup at a time until buttercream is thick and all of the icing sugar is combined. If the frosting is too runny, add more sifted icing sugar - if it is too thick, add in some thickened cream or milk.
Once the Buttercream is ready, gently mix through the sprinkles of your choice until evenly distributed. Lather over your chosen tasty morsel and enjoy!
500g Salted Butter, softened*
6 cups Icing Sugar Mixture
2 tsp Vanilla Bean Paste
1/4 cup Sprinkles
1 tbls Milk or Cream**
*I love to use salted butter to balance the sweetness, if you prefer an extra sweet kick just replace the salted butter with regular unsalted.
**Use to thin Buttercream if needed
