SNICKERS RICE CRISPY DOUGHNUTS

With crushed peanuts, choc-chips and caramel sauce

I doughnut even know where to start…

 

I am a total doughnut lover! I am still not completely convinced that I didn’t start a doughnut company, purely based on the fact that I just wanted to eat left over doughnuts after every batch…

 

But, let’s face it, running your own business needs to have its perks - especially doughnut shaped ones!

But when it comes to making doughnuts from scratch, sometimes I just don’t have the time to give them the TLC they deserve! So, I wanted to create something, just as fun and just as tasty, but in under ¼ of the time!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

Enter, my new Snickers Rice Crispy Doughnuts! ‘Doughnuts’ with a totally delicious twist! They are made completely out of delicious rice bubble cereal (side note - that means they are totally acceptable for breakfast!) mixed with a melted marshmallow/snickers batter to make for the perfect crunchy treat!

They are totally moreish, so much so, that yesterday I ate four. Literally. Four. (please don’t judge me, haha!) They are just so irresistibly crunchy, surprisingly light and sweet enough to keep you coming back for more…or for, four.

So, for a cute doughnut shaped treat without the hassle of waiting for the dough to rise, you can’t go past these babies!

Gather The Following...

Now, Lets Begin!

To begin, grease two, 6 doughnut hole pans and set aside until needed.

 

Place your chopped Snickers, butter, golden syrup, marshmallows and peanut butter into a small saucepan, over low heat. Continue to mix until everything has melted and the mixture is smooth and combined. Remove from the heat and allow it to cool for 5 minutes.

 

Next, stir in your Rice Bubbles (rice crispy cereal) until everything is coated in your melted snickers mixture. Add in the caramel sauce and stir until combined.

 

Place an equal amount of the rice crispy mixture into each doughnut hole, pressing down heavily to ensure everything is stuck together to hold it’s shape after it has cooled. Once all the doughnut spots are filled, place the tins into the fridge to chill for 1 hour, or until fully set.

 

Once your doughnuts are chilled, prepare your topping! Start by melting your chocolate and coconut oil in the microwave in 30 second bursts, until melted and smooth. Finally, remove each ‘doughnut’ from the tin and dunk lightly into the melted chocolate mixture to cover the rounded tops. Sprinkle with peanuts, chocolate chips, a drizzle of caramel and voilà, you’re in rice crispy treat heaven! 

150g Snickers, chopped (6 mini bars)

75g Butter

1 Tbls Golden Syrup

1 cup Marshmallows

1 TBLS Peanut Butter

5 Cups Rice Bubbles

¼ cup Caramel

TOPPING...

1 cup Dark Chocolate, chopped

1 TBLS Coconut Oil

¼ cup chopped Peanuts

¼ cup Chocolate Chips

Extra Caramel sauce (for drizzling)
