VEGAN SNICKERS BITES

With peanut butter and vegan dark chocolate

It has been nice and cool on my side of the world lately, which means I always seem to be in the mood for some delicious comfort food (forgive the rhyme)! But because my whole diet sadly cannot consist of sugary/fully delicious desserts 100% of the time, I always need to have some go-to snacks on hand to curb those comfort food cravings.

Enter my vegan delights! Bite-sized pieces of healthier dessert snacks without any compromise on flavour. Vegan desserts have come a long way in the last few years which has made me an extremely happy camper! (side note: I don’t actually like camping.) Vegan food used to be a tad tasteless, way-too-healthy tasting and ingredients, super overpriced! Well –praise the Lord- now it’s not only DELICIOUS, rivalling mainstream desserts but it’s also more affordable. VEGANS REJOICE!

The only thing is, these delicious and indulgent treats DO NOT last long enough in my house and that often makes me feel two things: 1. Happy that my food is being enjoyed –because I’m a feeder…

2. A little bitter because I wanted to feed myself with them. So, I do tend to hide a few squares every now and then for back-up, haha!

Difficulty: Easy!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

The peanut butter portion of this has always been my favourite part of the slice (go figure), I could eat it straight out of the processor (and I do) but when its mixed with the chocolate, it actually gets even better!!

 

So if you’re a peanut butter or traditional snickers bar fan then trust me when I say you will fall in love with this healthy vegan version! Especially because you can actually eat it every day for your peanut butter fix and all without the guilt – not that I ever get that when it comes to food ;)

Oh, and did I mention how easy these are? Well, prepare for the quickest healthy treat you could ever want. I couldn’t even drive to the shops and buy a real snickers in the time I could whip these up!

Gather The Following...

Now, Lets Begin!

To begin, start by lining a slice tin with baking paper and set it aside.

 

Place your almonds, cahews and oats into your food processor and blitz on high until the mixture is finely diced. Add the dates, cocoa and melted coconut oil and continue mixing on high until everything is finely chopped and binds together firmly when pressed.

 

Press your base mixture into the lined tin and press down firmly to secure the mixture together. Place the base in the fridge to set while you prepare your filling.

 

To make your filling, place your peanut butter, maple syrup and vanilla into a small saucepan and heat over low until everything is super smooth, creamy and fluid. *Alternatively for a quicker option, microwave your mixture in bursts of 30 seconds until you achieve this result – I just find the stove version therapeutic! * Stir in your crushed peanuts until evenly distributed.

 

Remove the base from the fridge and pour your silky filling over the top, using a spoon to evenly spread the peanut butter across the top and into the corners of the tin. Return the mixture to the fridge to firm up for 10 minutes, or until set.

 

Lastly, melt your vegan dark chocolate, in 30 second bursts, in the microwave until smooth and melted. Remove your slice from the fridge and pour your chocolate over the peanut butter mixture, smoothing the chocolate evenly across the top. (You will have to work quickly as the chocolate will begin to set over the cooled base.)

 

Return your slice to the fridge for a final chill until completely set, then simply remove from the tin, slice and DEVOUR!

1/2 cup Natural Cashews

1/2 cup Almonds

1 cup Rolled Oats

20 Medjool Dates

2 TBLS Cocoa

1/4 cup melted Coconut Oil

2/3 cup Natural Peanut Butter

1/4 cup Roasted Peanuts, crushed

1 TBLS Maple

1 tsp Vanilla Extract

1 cup Vegan Dark Chocolate
