THE ULTIMATE SALTED CARAMEL SAUCE

The nectar from heaven

It’s been a while since I have had the chance to sit down and blog (deep sigh). With my new business, Sugar Gathered, opening up on the Gold Coast, I have been working incredibly hard to establish that. It’s been a fantastic, stressful and delicious journey, but in the process of working towards that, I have missed being able to provide you all with those weekly sugar hits…my deepest, sweetest apologies! BUT, that’s all about to change! I have a recipe that is sure to make your mouth water once again!

If you’ve seen a lot of my recipes, you would know that I am slightly (okay, majorly) addicted to caramel! In every single form that I can get it, caramel has and always will be my number 1.

 

From fudge to ice cream, candy bars to popcorn - It’s like a nectar from heaven that I honestly, could never get enough of. And, after so many of my wonderful readers (you guys!) requested this recipe, I thought I better not keep it this stuff a secret any longer, because the best things in life must be shared – of course! 

Difficulty: Easy!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

This salted caramel sauce is the ULTIMATE in salty/sweet indulgence and beware, once you make it you will top EVERYTHING in it, or just spoon feed it to yourself…well at least I do… I love it so much that when I was asked what three things I always keep in my fridge, a jar of this homemade salted caramel made the list - along with chocolate and juice (keeping that healthy balance, ha!)

Oh and did I mention its only 4 ingredients to make a huge and delicious batch?! Ahhhh, Life is good!

 

So ladies and gentlemen, get all your ingredients and spoons at the ready and prepare to be licking the caramel straight from the pot!

Difficulty: Easy!

Gather The Following...

Now, Lets Begin!

Begin by placing your sugar into a medium pan over medium heat. Using a heat proof, rubber spatula, stir the sugar gently and continuously. The sugar will begin to clump and dissolve, continue stirring until you are left with a beautiful dark, golden liquid!

 

As soon as all the sugar is dissolved, add in the cubed butter and stir until it is completely melted and incorporated into the sugar.

 

Next slowly add in the thickened cream, continuing to stir until combined. At this point your caramel will bubble, stop stirring and carefully allow it to blip away for 1-2 minutes before removing it from the heat.

 

Last but certainly not least, sprinkle over your sea salt and stir to evenly distribute it throughout your sauce.

 

Allow the Carmel to cool completely before pouring it into or over your chosen vessel! Remember to share!

2 cups White Sugar

200g Salted Butter, cubed

1 cup Thickened Cream

2 ½ tsp of Sea Salt
