SALTED CARAMEL BUTTERCREAM

Spiked with homemade salted caramel sauce

I get a lot of questions about how I flavour my buttercream, and I often find that people think it’s a lot harder than it actually is – I was one of these people! I used to think there must have been a really complicated way to get the best tasting flavours into a rich buttercream frosting – well, I was so wrong! It is insanely easy to pack frostings with delicious flavours by just using the fresh and simple flavours themselves. For fruit flavours, use fresh fruit puree or preserves. For Chocolate, use melted chocolate or cocoa powders and for caramel, or more importantly, salted caramel – use the most delicious homemade sauce!

I have just recently posted my go-to ULTIMATE salted caramel sauce (you can find it here), and this beautiful liquid is the exact one I have used to create my salted caramel buttercream! By taking a cup of my salted caramel sauce and adding it to the base of my go-to buttercream, I have my favourite Salted Caramel Frosting! And it rivals any salted caramel frosting I have ever tasted – It’s so good I could spread it on toast in the morning...New recipe idea, maybe? (ha!)

Unlike my normal buttercream, I whip the salted caramel sauce with the butter, before adding the icing sugar. This ensures there’s a nice whipped and even amount throughout the entire mix, which means extra caramel flavour in every bite!

 

I use this soft, pillowy goodness for both fillings and frostings - and it always wins over the crowds!

Now, Lets Begin!

Start by making your salted caramel sauce, you can find the recipe here.

 

Next, beat the butter on high using an electric stand mixer, until fluffy. Add in the Salted Caramel Sauce and beat again on medium speed until fully incorporated.

 

With the mixer on low speed, add in the icing sugar mixture, one cup at a time until buttercream is thick and all of the icing sugar is incorporated. If the frosting is too runny, add more sifted icing sugar - if it is too thick, add in some thickened cream or milk.

 

Once the Buttercream is ready, (yep, its that easy!) lather it into, or over your chosen tasty morsel, and enjoy!

500g Salted Butter, softened*

½ cup Salted Caramel Sauce (recipe here)

6 cups Icing Sugar Mixture

1 tbls Milk or Cream**

*I love to use salted butter to balance the sweetness, if you prefer an extra sweet kick just replace the salted butter with regular unsalted.

**Use to thin Buttercream if needed
