MARVELLOUS CREATIONS BROWNIE SLAB

With candy galore!

After heading towards the bottom of my chocolate bar barrel, I hit these little bars of gold! Marvellous Creations – and marvellous they are indeed! These ones in particular are milk chocolate candy bars filled with’ Jelly Popping Candy Beanies’! 

I was instantly inspired wanting to try something a little different and head a little out of my comfort zone by adding copious amounts of lollies into a ultra-chocolatey recipe (of course)!

You see, I do have a soft spot for lollies and nothing beats them for colourful cake decorations, but for me personally, caramel and chocolate treats win, every time.

 

That being said, this has to be my perfect compromise, surrounding delightful bursts of candy, with melt-in-your-mouth chocolate!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

Heading out of my comfort zone with this recipe meant a few different things:

  1. Mixing things together that I usually wouldn’t

  2. Trying new flavours and tastes

  3. Making it all sing together in harmony

A tricky combination… but no matter what, it all had to taste DIVINE!

 

Thus was born my Marvellous Creations Brownie Slab! A S’mores meets Rocky Road meets fudge brownie hybrid that was concocted with squillions of lollies here in my studio (insert creepy laugh ‘muhahaha’).

So, I started with the base, a deliciously sweet/salty mix of Ritz biscuits, butter and salt. A crunchy and unique twist to liven things up! Next, a dense, rich and sweet blend of chocolate fudge brownie spiked with Mini Marshmallows, Salted Peanuts, Mini Jelly Beans, Popping Candy and of course 2 chopped Marvellous Creations Bars.

 

Finally – if it could get more indulgent – I decided I would finish by topping it off with a layer of Dark Chocolate and extra, pretty candy toppings!

I used a product called ‘Candy Fetti’ to top these brownies as I’ve been dying to use this stuff! It has a taste similar to sherbet lollies and is very unique! It’s such a fun twist to use instead of the usual sprinkles, however feel free to use more cut up lollies or sprinkles if you can’t get your hands on some!

Gather The Following...

Now, Lets Begin!

Begin by lining a brownie/slice tin with baking paper, set aside.

 

To make the base, begin by blitzing the Ritz Crackers, melted butter and sugar in a food processor until soft and combined (mixture will stick together when pressed – feel free to add a little more butter if it isn’t the consistency you need). Press the base crust mixture into your prepared tin and place in the freezer to set while you prepare your brownie.

 

To make your fudgy chocolate brownie, begin by preheating your oven to 160° Celsius.Place the dark chocolate and butter into a small bowl and melt using the microwave for 1 minute, stirring every 30 seconds, until smooth and silky. Allow it to cool.

 

In a large bowl whisk together the brown sugar, plain flour, cocoa and eggs until combined. Once combined, fold through the cooled chocolate mixture until batter is smooth, before adding in your mini marshmallows, jelly beans, popping candy, snakes and chopped chocolate until evenly distributed.

 

Pour brownie batter over your chilled crust and place it into the oven for 40-45 minutes or until cooked. The brownie will seem soft however it will harden as it cools. Cool the brownie in its tin on a wire rack for 15 minutes before placing it in the fridge to cool completely, 1-2 hours.

 

Once brownie has set, make your chocolate coating. Place your dark chocolate into a small bowl and melt in the microwave for 1 minute, siring every 30 seconds, until melted and smooth.

 

Remove your cooled brownie from the tin and place it on a wire rack. Pour over your chocolate mixture and smooth the top until evenly coated, allowing it to drizzle down the sides. Sprinkle with your chosen toppings and place it in the fridge to set.

 

Once set, cut into square slabs and serve! Enjoy!

FOR THE BASE...

1 ½ sleeves of Ritz Crackers

5 Tbls Butter, melted

3 Tbls Sugar

 

FOR THE BROWNIE...

200g Dark Chocolate

200g Salted Butter

1 ½ cup Dark Brown Sugar

¾ cup Plain Flour

2 Tbls Cocoa

2 Eggs

½ cup Mini Marshmallows

¼ cup Salted Peanuts

¼ cup Mini Jelly Beans

¼ cup Popping Candy

¼ cup Snake Jellies, chopped

2 small bars of Marvellous Creation Chocolates

 

FOR THE CHOC TOPPING...

200g Dark Chocolate

3 Tbls Coconut Oil

½ cup Mini Marshmallows

Candy of choice! – I used Candyfetti!
