
COOKIE DOUGH PRETZEL BLONDIES
Packed with all kinds of chocolatey mix in's

It has been a big day! One including internet dramas, baking fails and house cleaning…sounds like fun, huh?! But, in and amongst the chaos of the day I was able to cheer my afternoon up with these loaded, thick and completely delicious cookie dough blondie squares!

They not only filled my house with the sweet aroma that traditional brownies carry, but they were so insanely colourful and pretty, that they melted my heart when I took them out of the oven (and then melted in my mouth…)
They are easy, filled with M&Ms, white chocolate chips, sprinkles and topped with a pretzel on each square – not only does this make my ‘rustic’ attempts at cutting a lot less ‘rustic’ but it also adds a crunchy and salty note to these delightfully sweet blonde babies!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

If you haven’t tried ‘blondies’ -brownies ultimate sibling- then these will make you a convert! They are a delicious twist on a classic recipe and will make any cookie dough lovers heart, sing! Every bite is a burst of cookie dough flavour, gooey white chocolate and crunchy M&M + Pretzel happiness!

My fridge has been so full of delightful treats this week, but every time I return to it I swear there is always a square missing from this batch…There’s lots of mystery food munchers in this house, do they run around yours too?!

Gather The Following...
Now, Lets Begin!
Begin by preheating your oven to 170 Celsius. Line a 9x9 baking tin with baking paper and set aside.
In a large bowl cream together the butter, brown sugar, white sugar and vanilla using an electric hand mixed until light and fluffy (roughly 2-4 minutes). Once the butter and sugars are combined, add in the eggs one at a time until completely incorporated.
Next, Sift over the flour, baking soda and salt. Fold the flour through the batter using a spatula, until just combined – be careful not to overmix. Pour in 1 cup of your ‘mix in’s’ and fold gently until evenly distributed.
Pour your batter into your prepared tin and gentle flatten using the back of your spatula (or a spoon). Pour over the remaining mix in toppings (1/2 cup) and pretzels, pressing gently to secure them to the top of the blondie!
Pop into the preheated oven and bake for 26-30 minutes or until the edges are slightly crunchy and your blondie is golden brown. Once cooked, remove it from the oven and allow it to cool completely in the tin on a wire cooling rack.
Once cool, remove it from the tin, slice and devour!
185g Butter, Salted
¾ cup Brown Sugar
½ cup White Sugar
1 tsp Vanilla Bean Paste (or extract)
2 large Eggs
2 ½ cups Plain Flour
1 tsp Baking Soda
A pinch of Salt
1 ½ cups ‘Mix In’s’, divided*
16 Pretzels**
*Your ‘Mix In’s’ can be anything you like! We love using a blend of milk chocolate chips, white chocolate chunks and mini M&M’s – but you can be as creative as you like!
**We place a pretzel on the top of each square for a salty and crunchy texture hit but you of course could omit these if pretzels aren’t your thing.
