TRIPLE CHOC CRUNCHIE BROWNIE SLICE

Spiked with honey

This slice is TRIPLE the fun with three layers of a chocolate lover’s heaven…

 

Chewy, gooey Dark Chocolate Brownie.

 

Silky smooth White Chocolate Honey Ganache.

 

Pillowy, whipped Milk Chocolate Ganache.

And as if it could get any better, it's smothered and studded with a healthy helping of crushed Crunchie bars! 

Difficulty: Easy!

Parties aside though, sometimes there is nothing better than sitting down after a long day (or a long morning for us mums!) and enjoying something totally decadent, filled with totally necessary calories and a cup of strong coffee. And, as you might be able to see, I couldn’t even wait for mine to set before I dived right in… I blame my dessert addiction...

Speaking of indulgence, I am now onto what feels like my hundredth day of tasting rich recipes for breakfast, and my body is starting to realise chocolate as it's new, main food group.

 

ITS GREAT!

 

I am absolutely loving experimenting with all different kinds of chocolate goodies. I literally feel like a kid in a candy store when I open my pantry these days and honestly, nothing makes me happier!

 

Except these…These are seriously gooey…Just look at that texture, those crunchy pieces and that silky white chocolate ganache!

I had to practically hide these from Tim overnight because once he got wind of the them, he was dying to dig in! I don’t blame him, I mean, I got to taste test it along the way and I would have serious FOMO if I couldn’t get my hands on some. But, photos for you guys come first and devouring what’s left comes second!

 

At least that’s the goal most of the time…

These lovelies require you to bake out a brownie, crumble it up, mix it with LOTS of Crunchie pieces and press it all back into the tin. I promise I’m not crazy, even if it sounds it - it was necessary, and trust me, it’s totally worth it! You see, the humble Crunchie would just melt if baked inside the brownie, so, there is a method to my following madness!

 

As an added tastebud bonus, I put a touch of honey both in the ganache and in the brownie base. This was to emphasise the honeycomb flavour as much as I could - and it worked brilliantly!

 

*This brownie is adapted slightly from my Brilliant Basic Chocolate Brownie with the addition of honey.

Gather The Following...

Now, Lets Begin!

Begin by preheating your oven to 180°C and line a brownie/slice tin with baking paper - set aside.

 

In a large bowl, whisk together the oil, honey, sugar, eggs and vanilla until thoroughly combined. Sift the remaining dry ingredients into the wet mixture, and fold until silky and smooth.

 

Pour the batter into the prepared tin and pop it in the oven to bake for 20-25 mins.

 

Once the brownies are cooked, remove them from the oven and use a spoon to scoop the brownie out into a bowl (do this while they are fresh out of the oven so they do not harden on the tops). Using a fork, break apart the brownie mixture to form brownie crumbs, then allow the crumbled brownie to cool in the bowl.

 

While the brownie is cooling, make your white chocolate honey ganache. Place your chocolate, cream and honey into a microwave safe bowl and heat for 30-60 seconds, stirring until melted and smooth - set aside.

 

Once your brownie has cooled, mix through your chopped Crunchie bars gently and return the mixture back into the brownie pan, pressing down gently to even the surface and secure the brownie in place.

 

Pour your white chocolate ganache over the brownie base and tap lightly on the bench top to fill in any air pockets in the brownie. Place the tray into the fridge and chill for 1-2 hours, or until set.

 

15 minutes before serving, make your milk chocolate ganache! Place your chocolate and cream into a microwave safe bowl and heat for 30 seconds-1 minute, stirring until melted and smooth. Allow it to cool for 10 minutes in the fridge. Remove it from the fridge and whip the ganache using a whisk until light and fluffy!

 

Spoon the ganache onto the top of the slice, cover in more Crunchie pieces and cut - serve immediately!

For the Brownie Base...

¾ cup Vegetable Oil

¼ cup Honey

1 ½ cups White Sugar

3 Eggs

1 tsp Vanilla Extract

¾ cup Plain Flour, sifted

½ cup Cocoa, sifted

1/3 tsp Baking Powder

A pinch of Sea-Salt

2 large Crunchie Bars, chopped

 

For the White Chocolate Ganache...

200g White Chocolate, chopped

¼ cup Milk

2 Tbs Honey

 

For the Milk Chocolate Ganache...

100g Dark Chocolate

1/4 cup Thickened Cream
